De Cicco Broccoli

Broccoli is one of the high ranking super foods that is readily available today. It is high in anti-oxidants, vitamin C, vitamin K and calcium. This variety originated in Italy and became available to gardeners in 1890.

An easy to grow Broccoli that will have your child intrigued as they watch it grow and the florets start to compact and taking shape. The seeds are easy to sow and are somewhat forgiving of soil temperatures which should be anything between 7°C to 30°C.

  • Space seeds 30cm apart in a nutrient rich soil.
  • Keep seedlings well-watered, if the soil is too dry the seeds will bolt, making it unedible. (Bolting is a defence mechanism for plants. If the soil conditions are not suitable, e.g. the temperature, it will instinctively start producing flowers or seeds).
  • Harvest in 10-16 weeks
  • Cut the middle head off and leave the plant in its place, side stems will form and you can harvest them for the next 2 or 3 months.
  • If the plants yellow flowers have opened, then it is generally past eating as the flavour tends to be very pungent with a woody undertone. If you are not sure then rather harvest sooner, then later.

    Ingredients:

    2 potatoes diced into 5cm pieces.

    2 cups of raw shredded broccoli. A food processor or blender does the trick.

    1 onion diced

    Parmesan cheese

    2 eggs

    ½ tsp salt

    *Optional - thyme or basil

    Instructions:

  • Place the potatoes into a pot and fill with cold water, only just covering the potatoes. Add the salt and bring to boil until the potatoes are soft.
  • Mash the potatoes and add all the ingredients EXCEPT the cheese.
  • Let you little one roll the mixture into golf size balls. This is their favourite part!
  • Add a table spoon of olive oil onto the pan and heat up as much as possible without the oil smoking.
  • Place the balls onto the pan and flatten them slightly.
  • Fry for 4-5 min on each side or until golden brown.
  • Sprinkle some parmesan over.
