Parsley is a pretty little Mediterranean herb. The leaves are not only used as garnish, they also add flavor and color to any dish. Curley parsley is known to be nature’s breath freshener. Parsley is also extraordinarily rich in nutrients! A surprisingly small amount of parsley is packed with vitamins C and A, minerals (especially potassium), calcium, iron, beta-carotene, folate and dietary fiber.

Parsley can be easily grown year round, and at 2 to 3 months you will have constant supply of parsley right from your Rootbox. It can be kept inside or left in indirect sunlight outdoors. Parsley is best-grown in light, well-drained soil.

  • Pre- soak the seed for a day before planting. Sow seeds at a depth approximately three times the diameter of the seed. Best planted at soil temperatures between 10°C and 30°C. 
  • Water regularly so that the soil stays moist.  It will take about 3 - 5 weeks before the seedlings are seen.
  • Space plants: 20 - 30 cm apart
  • Harvest in 9-19 weeks. Stalks to be cut from outer part of plant.
  • Can grow beside Carrots, Chives, Tomatoes, Asparagus.

**Rootbox Culinary Tip- Lemon Tahini Dressing (by Dianne Wenz)

This delicious dressing can be poured over salads, spread it on sandwiches and also makes a great variety of pizza sauce. This makes anything taste better.

 Ingredients

1 cup tahini (or any type of nut butter)

½ - ¾ cup water

½ cup lemon juice

1 tablespoon Dijon mustard

1 tablespoon garlic powder

½ teaspoon sea salt

¼ cup chopped parsley

Instructions

Mix together the tahini, ½ cup of water, lemon juice, mustard, garlic powder, and sea salt in a food processor or blender.  Water can be added a little at a time if it’s too thick. Add in the parsley and pulse until well-combined.
