Rocket is mostly known as the “salad herb”. Because of their rich green colour and flavour, this rustic Mediterranean herb gives life to many salads. They are known by its distinctive mustardy, peppery sweet taste. Rocket leaves combined with different types of cheeses and tomatoes make a delicious sandwich and can also be cooked like other leafy vegetables. Rocket flowers can also be used to add flavor to most Mediterranean dishes. This versatile herb is a must for any gardeners collection.

Rocket has a high vitamin and mineral content rich in potassium, iron and silica.  The leaves are rich in antioxidants, they also contain phytochemicals (protective and disease preventive properties) and is a rich source of sulforaphane (an anti-cancer, anti-microbial and anti-diabetic compound). Rocket tea, infused with honey and lemon can also make a great cough remedy.

Rocket is very easy to grow in any season and it grows best in rich, moist, well-drained soil.  They do love sun but very hot summers are not entirely good for this plant so it’s best to grow them in shaded areas during the summer months. But full sun exposure in the colder, winter months will be just fine for them to flourish.

  • Sow seeds 5cm deep, 15-20 cmapart in warm, well-watered soil.
  • Water daily so that soil stays moist but take care not to waterlog soil.
  • Harvest time in 3-4 weeks upon sowing- preferably when young leaves are 10cm long. Plants can grow to about 40-60 cm.
  • Prune newly planted plants (cutting them back about a third) immediately after flowering to encourage strong, bushy growth and help prevent plants from growing too tall.

This is great to use in pasta dishes, sandwiches, wrap spreads or on just plain toast. Kids love it.

Ingredients

2 cups Rocket

2/3 cups olive oil

2 garlic cloves

1/4 cup nuts of your choice

1/4 cup Parmesan cheese

Salt to taste

Instructions

Grate the parmesan and garlic in a food processor until well combined and set aside. Place the Rocket and nuts in the processor until just chopped. Mix in the parmesan, salt and oil until combined and serve.

For Parmesan toast, take slices of multi grain or whole wheat bread, spread with pesto and sprinkle some parmesan cheeseover. Toast the bread on a pan until the cheese has melted.
