Thessaloniki Tomato

The ‘looker’ of the family - this beauty of a tomato originated in sunny Greece and our South African summers create the perfect environment for this tomato to really thrive.

Thessaloniki Tomatoes are relatively low maintenance, needing only full sun and moderate watering. As with all tomato plants, these are annuals and will only grow over the course of a single year.

*Rootbox Culinary Tip – ‘Gemista’ (Yem-ee-sta). A traditional Greek dish that is easy to make and is really tasty – A family recipe and a personal childhood favourite of mine as well.

Ingredients:

6 Tomatoes (peppers or gem squash can also be used as an alternative) – Large enough to hollow out

1 diced Onion

500g lean mince

½ cup rice

2-3 cloves of garlic

Olive oil               

Honey  

Directions:

  1. Cut the top of the tomatoes off and hollow out the tomatoes with a spoon. Keep the pulp and the tops one side.
  2. Sautee the onions in olive oil until translucent.
  3. Add the mince and stir until brown.
  4. Add the pulp from the tomatoes you set aside earlier along  with the rice to the mince.
  5. Spice to taste–oregano, salt, pepper. Some parsley and mint go well but are not a necessity.
  6. Add a teaspoon of honey (to counter the acidity of the tomato).
  7. Place the hollowed-out tomatoes in a pan and use a spoon to fill them with the mince.
  8. Drizzle olive oil over the tomatoes and cover them with the tops.
  9. Bake at 180°C for 1 and a half hours or until the tomatoes are soft.
