Thyme is an aromatic herb that is used in French and Italian cuisine. Thyme is also a vital ingredient in some Caribbean and Middle-eastern dishes. Fresh or dried, the stems and leaves are used to add flavor to a variety of dishes such as soups, sauces, stews and casseroles. Grinding the leaves can create a fine spice or delicate tea to be brewed. 

When you eat just a teaspoon of thyme, you will get an influx of an array of nutrients such as: vitamin C, A, B6 , fiber , riboflavin, iron , copper, and manganese, calcium, folate, phosphorus, potassium and zinc. Thyme seems to be a miracle herb with many health benefits too. Medicinal uses include its ability to: reduce breathing problems, improve heart health, boosts immune system, gives protection against chronic illnesses, stimulate blood circulation, prevent fungal infections and relieve stress.

Thyme is easy to grow and is best cultivated in sunshine with well-drained soil. It is able to withstand extreme temperatures. These plants will have the most intense flavor in summer months.

  • Sow seed at a depth approximately three times the diameter of the seed. Best planted in warm soil of temperatures between 15°C and 25°C.
  • Space plants 25 - 30 cm apart
  • Water to keep the soil moist but water sparingly once established.
  • Keep under cover until at least 10cm high. Harvest once stems have hardened.

Ingredients

2 cups flour (preferably almond)

¾ teaspoon baking soda

¼ teaspoon salt

1 tablespoon chia seeds

¼ teaspoon thyme leaves

Zest from one lemon

2 eggs

2 tablespoon lemon juice

2 tablespoon syrup (golden or maple)

1 ripened banana

Instructions

Preheat oven to 180 ˚C.  Mix together flour, baking soda, salt, chia seeds, thyme, and lemon zest. In separate bowl, mix together banana, lemon juice and syrup.  Add in eggs and mix until there are no lumps.  Add wet mixture to dry ingredients until well combined.  Bake in a greased muffin try for 20 - 25 minutes. Let it cool and enjoy.
